
Ingredients
- Garlic: 8 gloves
- Soysauce: 6 tbsp
- Chicken legs: 1kg
- Onion: 1 medium size
- Canola oil: 2tbsp
- Dried bay leaves: 2pcs
- Vinegar: 6 tbsp
- Brown Sugar: 2tbsp
- Pepper Corn: 1/2 tbsp
- Mirin: 3 tbsp
- Optional Toppings:Boiled Eggs, fried potato
- Spring inion for garnish
Method
- Marinate the chicken with soy and garlic overnight or atleast 30mins minimum
- Add oil in the pan and sear the drained chicken at all sides until, about 2 minutes
- Remove the chicken and add the diced onions until translucent
- Add in remaining marinate, MIRIN, pepper, bayleaves, and 1 cup of chicken broth, let it boil. Cover and cook for 20 minutes in low heat
- Add vinegar (do not cover, do not stir) boil for about 1 minute.
- Add sugar and stir. Add salt and pepper to taste
- Optional: Top with egg and fried potatoes
- Garnish with sliced spring onions.
- Serve with hot jasmine rice!
