
Ingredients
- Obento Yaki Nori for Sushi
- 1 cup Rice
- 3 Raddish
- 1/4 Watermelon
- x1 Lemon
- Lettuce
- Tofu block
- Sliced ginger
- 1/2 Red Cabbage
- Rice Wine Vinegar
- Edamame
Method
- Preheat oven to 180 degrees.
- Cook rice with rice wine vinegar in rice cooker or using absorption method.
- Roughly chop cabbage. Place in big pot filled with 3-4L water and Boil for 5min. This will create the colouring for the cherry blossom.
- Chop up Tofu block into tiny .5cm squares. Divide tofu into 4 bowls. Put one of these bowls aside.
- Once cabbage has boiled, spoon bright purple coloured water into the remaining 3 bowls. Add 2bsp of lemon juice to each of the two bowls. This will create a reaction and the tofu will turn pink. Add water to one of the pink bowls so you have two shades of pink Tofu. Leave for 1hr for colouring to saturate.
- Set up a lined baking tray with foil or baking paper. Evenly spread out remaining tofu on tray. Lightly drizzle/spray olive oil to avoid sticking. Drizzle half the tray with Obento Teriyaki Marinade (1tbsp) and sprinkle with sesame seeds. Place in oven for 20mins. Check regularly and toss to evenly bake.
- Now to create other garnishes. Use a 1/2 teaspoon spherical measurement to scoop little balls of watermelon and set aside. Prepare edamame. Thinly slice Yaki Nori sheets into thin, long pieces; these will be the branches of the cherry blossom. Arrange tofu pieces of all different colours and get creative .
