
Ingredients
- MARINADE:
- 1 tsp five spice
- 2 1/2 tsp salt
- 4 Tbls brown sugar
- pepper to taste
- 1 Tbls soy sauce
- 2 Tbls hoisin sauce
- 1 Tbls chinese cooking wine
- 2 Tbls Honey
- 2 garlic coves crushed
- 2 cubes of red fermented tofu
- 3 tsp red fermented tofu liquid
- 500g pork belly rashers rind removed
- BASTE:
- 3 Tbls honey
- 3 Tbls marinade
- 1 tsp water
- CUCUMBER SALAD:
- 2 small cucumbers
- pinch of salt
- 3 cloves garlic crushed
- 2 Tbls rice wine vinegar
- 2 Tbls soy sauce
- 2 Tbls spiced chilli oil
- 1 1/2 tsp sugar
- 2 tsp sesame oil
- toasted sesame seeds, spring onion and Chinese cabbage leaves for garnish.
- Rice to serve (optional)
Method
- in a bowl combine the marinade ingredients, once thoroughly combined remove 3 tablespoons of the marinade and place in a small container in the fridge. Put the pork and remainder of the marinade into a ziplock bag and shake until the pork is fully covered. Marinate for 1-2 days in the fridge.
- When ready, remove the pork from the fridge and let sit for 30 minutes at room temperature. Pre heat the air fryer to 200C and combine the baste ingredients in a small bowl.
- Spray the air fryer tray or rack with a little oil and lay the pork on top in a single layer. Baste the pork on both sides with a brush and cook for 6 minutes. remove the pork, flips the pork over, baste both sides again and cook for another 6 minutes. Remove the pork again and flip, baste both sides and cook again for another 2-3 minutes or until the pork is cooked and you see some charring on the edges.
- While the pork is cooking slice the ends off the cucumbers and slice the cucumbers in halves lengthwise. With the skin side up press on the cucumbers with the knife handle to squash them. slice into 1 inch chunks, place in a bowl and sprinkle on the salt mixing it in well. Combine the ingredients for the dressing together and set aside.
- Drain the liquid from the cucumbers and place on the Chinese cabbage leaves, Drizzle with the dressing and top with toasted sesame seeds. Plate your pork belly slices and your rice (if using).Enjoy!
