
Ingredients
- 1kg pork belly cut into 1 inch cubes
- 1/2 tsp salt
- 1/2 tsp cracked black pepper
- 1 tbs minced garlic
- 1 tbs thinly sliced shallots or spring onion
- 1.5 tbs ABC sweet soy (kecap manis) sauce
- 2.5 cups coconut water
- 2.5 cups water
- 1/4 cup Squid brand fish sauce
- 1 tbs neutral cooking oil
- 2 tbs raw sugar
Method
- Put salt, black pepper, garlic, shallots & ABC sweet soy (kecap manis) sauce in a bowl and thoroughly combine with pork and let marinade for at least 15 - 30 minutes
- Place oil and sugar in a large pot on medium to create a lovely caramel (should take a few minutes and be careful not to burn) and place the marinaded pork belly in and stir to coat the pieces in the caramel sauce
- Add the coconut water and water to the pot to cover the pork belly pieces (add more water if required), add in the fish sauce to the pot and simmer on low heat for 30 minutes or until pork belly is tender
- Taste and adjust seasoning adding more fish sauce for saltiness or ABC sauce for sweetness to your preferences
- Serve in one bowl by combining your choice of rice, and your own preferred mix of cooked vegetables and enjoy!
