
Ingredients
- Pork belly
- 8 purple eschallots
- 2 crushed garlic cloves
- 1/4 cup soy sauce
- 3/4 cup finely chopped palm sugar
- 1 cup water
- 2 whole star anise
- 1 tsp Chinese 5 spice
- 1 tbs squid brand fish sauce
- Green shallots
- Steamed rice
- Sliced cucumber
- Coriander
Method
- Stir fry pork, remove from pan
- Cook eschallots and garlic until golden
- Add pork, soy sauce, palm sugar, water, star anise and 5 spice.
- Bring to boil. Reduce heat to low, and cook for 1.5 hours
- Increase heat and boil for 10 minutes until sauce thickens.
- Add fish sauce.
- Serve with rice topped with cucumber, coriander leaves and shallots
