
Ingredients
- 1.5 kg beef shin, cut through the bone into 5cm pieces (aka Osso Bucco pieces)
- 2 onions
- 2 potatoes
- 2 corn cobs
- 1/2 head cabbage
- 2 bok choy
- 1/2 cup fish sauce
- 3 spring onions
- Steamed rice
Method
- Wash the beef shin under cold water
- Place the beef shin into a large, deep pot and pour enough water to cover the beef by 5 cm
- Bring to the boil, skim any scum that comes to the surface
- Add roughly chopped onions, reduce heat to low and simmer for 2.5 hours, or until beef is falling off the bone
- Add the chopped potato and cook for ten minutes
- Add the chopped corn and cabbage and cook for 7 minutes
- Add bok choy and cook for 1 minute
- Remove from heat and stir in the fish sauce, and salt and pepper to your taste.
- Top with spring onion and serve with steamed rice.
