
Ingredients
- Yaki nori (4 sheets)Brown rice (250g)Kewpie Mayo ( 1/3 cup)White rice wine vinegar (tablespoon)Sushi ginger shredded (100g with juice)1 Avocado 200g Snow peas small head Broccoli (lightly steamed)3 Lebanese Cucumber Sushi rice seasoning flakes for topping
Method
- Cook brown rice, allow to cool.
- In a bowl combine kewpie, sushi ginger and juice, vinegar, mix well.Add liquid to rice and mix well
- Chop all veg to desired size and add to rice.
- Rip the the Yaki Nori into smaller pieces and serve around the edge of serving plate, sprinkle salad with rice seasoning & serve
