
Ingredients
- 1 onion
- 1 carrot
- a quarter small cabbage
- 1 eggplant
- 400 gm beef spare ribs
- 2 TBLSPN Valcom Thai Green Curry Sauce
- 150 ml Coconut Cream
- I TBLSPN brown sugar
- Instant Noodle Cakes
- 2 teaspoons fish sauce
- fresh coriander and lemon slices to garnish
Method
- Finely chop onion, carrot and cabbage
- coarsely chop beef ribs and eggplant
- Fry beef ribs and egg plant in vegetable/peanut/olive oil rapidly until turning brown, then add onion and carrot and fry until soft.
- Add curry paste and cabbage and stir in 1 minute, then coconut cream, fish sauce and sugar. Simmer 3 minutes, serve onto boiled instant noodles and garnish with fresh coriander
