
Ingredients
- 400mL coconut milk
- 600g chuck steak, cut into chunks
- 1 large onion, diced
- 1 cinnamon stick
- 4 kaffir lime leaves, finely sliced
- 1 T tamarind paste
- 1 T Brown sugar
- 1 T Fish sauce
- 4 T massaman curry paste
- 1/4cup crushed roasted peanuts, leave aside 1T for garnish
Method
- Heat 2tablespoons coconut milk in a large deep pan. Add the curry paste and fry until fragrant (about 1minute). Stir in beef and mix until well coated.
- Add in all other ingredients to the pan including the remaining coconut milk, onion, cinnamon stick, kaffir leaves, tamarind paste, brown sugar, fish sauce and most of the crushed peanuts (leave aside 1 Tablespoon for garnish). Simmer on low until beef is tender (approx. 1hour and 15mins).
