
Ingredients
- Soba noodles one serving
- Dashi stock granules one serving
- Shitake mushroom 1
- Tiger prawns 2
- Onion 1/2
- Asian greens 1 bunch
- Garlic 1 clove
- Green onions 1
- Thin sliced beef 50g
- Soy sauce 30ml
- Mirin 30ml
- Sake 30ml
- Togarashi
Method
- Cut garlic and onion into slices and set aside.
- In a pot combine soy sauce, mirin, and sake and bring to simmer and pour into a bowl.
- In the same pot add 350ml water and the shitake mushroom and bring to boil, then and Dashi granules and simmer until ready to serve.
- Bring a seperate pot of water to boil add soba noodles and boil for 3-4 minutes depending on your preference.
- In the same water add a few pinches of salt and blanch greens for 30 seconds.
- In the same water add the prawns and cook for 2 minutes.
- In a pan add some oil and stir fry onion and garlic. When fragrant add the sliced beef and a teaspoon of soy sauce mixture and cook until preferred doneness.
- Add the remaining soy sauce mixture to the simmering soup base.
- Peel the prawns and plate up ingredients in a bowl, add the soup, top with green onions and togarashi and enjoy.
