
Ingredients
- 200g rice vermicelli200g rice vermicelli noodles
- 1 tbsp peanut oil
- 2tbsp finely chopped lemongrass
- 2 tsp grated fresh ginger
- 2 garlic cloves finely chopped
- 2 small red chillies
- 400g beef mince
- 1 tbsp Valcom Thai red curry paste
- 100g thin green beans
- 1 red onion thinly sliced
- 2 tbsp Squid fish sauce
- 2 tbsp lime juice (wedges to serve)
- 1 tbsp brown sugar
- 1/3 cup mint and coriander leaves
- 1/2 cup chopped roasted peanuts
- 2 kaffir lime leaves ( finely shredded)
Method
- Soak noodles in boiling water for five minutes. When finished, divide into four-five bowls
- Heat oil in a wok over medium heat.
- Add lemongrass,ginger,garlic and chilli. Stir for 1 minute or until fragrant.
- Add beef and stir for 3-4 minutes or until browned.
- Add paste and stir for another minute, then add beans and cook for 2 minutes till tender. Remove from heat. Stir in onion, fish sauce, lime juice, sugar and herbs..
- Serve on noodles topped with nuts,lime leaves and lime wedges.
