
Ingredients
- 500gms Gravy Beef
- 1 onion - diced
- 1/2 jar of Valcom Red Curry Paste
- Tin coconut milk
- 1 carrot - chopped
- 1 eggplant - chopped
- Squid Sauce
- To serve –Rice
- Slices of lime
- Beansprouts
- Diced red chilli
- Fried Shallots
Method
- 1. Cut gravy beef into cubes and brown in hot oiled pan.
- 2. Add onion and fry gently for 5 minutes.
- 3. Add ½ Jar of Red Curry paste and fry for further 3 minutes.
- 4. Add coconut milk, carrot and eggplant and allow to come to simmer for 15 minutes.
- 5. Season with Squid sauce to taste.
- 6. Serve with rice, slices of lime, beansprouts, red chilli and fried shallots.
