
Ingredients
- 1 jar of Valcom authentic Thai Laksa paste
- 500g fish or seafood of your choice
- 1 garlic clove
- 1tbs of ginger
- 1 carrot
- 1 can of light coconut milk
- 1/2 leak
- Fresh coriander
- 1 stalk of lemon grass
- 1-2 fresh lime leaves
- 1tbs extra virgin olive oil
- 1 sheet of nori sushi - cut into triangles
- Glass noodles
Method
- Cut garlic and ginger into small pieces
- Cut carrots and leak into rings and cook glass noodles as per instructions on the package.
- Fry in a 3L pot, garlic, ginger, carrot, leak with olive oil until fragrant. Add laksa paste and cock for a minute, add coconut milk, lemon grass and lime leaves and cock for another 5 minutes until veggies are cooked.
- Take out lemon grass and lime leave (otherwise it will go bitter)
- Add fish or seafood until cocked ( 2min) gently stir
- Place seaweed in bowl then cocked glass noodles and top with laksa, garnish with coriander. Enjoy!!!!
