
Ingredients
- * 1/2 tbsp XO sauce
- * 1 tbsp honey
- * 1 tsp sriracha sauce
- * 1 tbsp soy sauce
- * 1 clove chopped garlic
- * 2 x small salmon fillets with skin on (approx 150g each)
- * 2 Spring onion stalks
- * 1 Red chilli sliced
- * 2 cups cooked rice
- * 1 Lebanese cucumber
Method
- * Mix the XO sauce, sriracha, soy sauce, honey and garlic in a bowl.
- * Coat salmon fillet in the sauce mix and let marinade for 20 minutes
- * Place the salmon fillets (skin side up) and all marinade on a large piece of foil and fold up the foil around the edges to contain the sauce.
- * Place in the air-fryer and cook for ~7 minutes at 200C
- * Once cooked serve salmon with rice (precooked according to packet instructions) and sliced cucumber. Spoon glaze next to the salmon. Top with sliced red chilli and spring onion curls (made by slicing spring onion lengthwise and adding to chilled water). * Enjoy!
