
Ingredients
- FOR THE SKEWERS (8pcs)
- 250g fatty pork mince
- 2 garlic cloves - minced
- 10g shallot - minced
- 20g (1 tbsp) sugar
- 8g (2 tsp) roasted rice powder
- 4g (1 tsp) corn starch
- 10ml (2 tsp) fish sauce
- 5ml (1 tsp) soy sauce
- 2-3 drops red food colouring
- FOR THE DIPPING SAUCE (Nuoc cham)
- 1 garlic clove - chopped
- 1 bird's eye chilli - chopped
- 15ml (3 tsp) fish sauce
- 30g (1.5 tbsp) sugar
- 30ml (1.5 tbsp) lime juice (1-2 lime)
- 60ml (3 tbsp) water
- OPTIONAL - LETTUCE WRAP INGREDIENTS
- Cos lettuce leaves, carrots, cucumber, onion, mint leaves and chilli
Method
- In a large bowl, add all the ingredients for the skewers and thoroughly mix to blend everything. (For more flavour, refrigerate the mix for at least 30mins before cooking.)
- Prepare your skewers by using equal amount of the mixture on each skewer stick. Once the skewers are prepared, spray lightly with an oil spray.
- Cook the skewers in the air fryer at 180°C for 10mins.
- For the dipping sauce, mix all the sauce ingredients in a small bowl until all the sugar has dissolved.
- Enjoy the skewers with the dipping sauce and by making lettuce cups with salad of your choice!
