
Ingredients
- 1 x Chicken breast (or can substitute e.g. tuna, pork or salmon)
- Rice of choice (I used a microwavable 250g white rice) or 1/2 cup rice - cooked to packed instructions
- Vegetables of choice approx. 1 cup (I usually use 1/2 an avocado but in this case I used a mix of carrot and green cabbage)
- Kewpie mayo
- Kewpie sesame soy dressing or Lee Kum Kee premium soy sauce (I used a drizzle of both)
- Sesame seeds
- Oil for cooking meat/vegetables - I used vegetable oil
- (Optional) Seasonings of choice for cooking meat/vegetables
- (Optional) seaweed snacks
Method
- Start by cooking your meat (unless you have substituted for something that doesn't need cooking e.g. canned tuna). I cooked my chicken breast on both sides until brown and seasoned with some onion powder.
- [Optional] If you do not have microwavable rice, I'd also boil a pot of water and cook your rice to packet instructions at the same time as the meat is cooking.
- While meat and/or rice is cooking, prepare your vegetables. I used a peeler to make slices of carrot, and then cut up some green cabbage. (You can substitute and use whatever vegetables you would like, I usually cut up half an avocado into cubes). I then cooked my carrot and cabbage in the frypan beside the chicken until it was soft.
- [Optional] If using microwavable rice I just quickly prepare this before assembling everything.
- Make sure your meat and vegetables are cut into bite sized pieces. Once everything is prepared and cooked, it is time to assemble.
- Put your rice in the bottom of the bowl, then add your meat and vegetables.
- To finish off I usually squirt Kewpie mayo on top as well as some soy sauce. (This time I used Kewpie sesame soy dressing, which added a nice tang to it.)
- Then you can sprinkle sesame seeds on top.
- [Optional] Enjoy as is, or you can also use seaweed snacks to wrap the rice bowl filling in.
- NOTE: Everything in this recipe can be substituted - any choice of meat or meat alternative, any choice of vegetables, any type of rice, etc. I hope this was helpful to making rice bowls!
