
Ingredients
- 1 tablespoons minced Ginger
- 2 tablespoons of stevia
- 1 tablespoon of honey
- 3 tablespoons of soy sauce
- 1 vegetable oil
- 1 table spoon sesame oil
- 1/4 teaspoon cinnamon
- 1/4 teaspoon cloves
- 2-3 whole Star Anise
- 2 tablespoons hoisin sauce
- Splash of cooking wine
- 2 teaspoons oyster sauce
- Obento Rice wine vinegar
- 1 Carrot
- 2 Red eye chillies (optional)
- Coriander (optional)
- Spring onion
- Peanuts for garnish (optional)
- Large flat mushroom
Method
- First preheat over to 180*C fan forced then Mix first 7 ingredients into a freezer bag to make thee sticky mushroom meat sauce marinade
- Half large flat mushrooms and gently press down to flatten
- Marinate in freezer bag for 15 minutes - for improved flavour marinate for longer
- Whilst mushrooms are marinating begin prepping your veggies: grate carrots, slice spring onion, slice chilli, pull apart some coriander
- Place mushroom in the tray evenly spread so they aren’t touching each other. Place on the bottom rack of the preheated oven for 30 minutes
- While the mushrooms are cooking reduce the remaining marinade into a sticky sauce, feel free to add extra sweetener or other ingredients as needed
- Finish prepping the carrots and spring onions by adding some of salt, stevia and submerging them in Obento rice wine Vinegar
- Every so often check If the mushrooms have released an excessive amount of liquid remove most of it and add some of the sticky syrup on top
- Then, after it has been cooked turn your oven to max or broil and place the mushrooms in the top rack. Checking every 1-2 minutes add additional sticky sauce
- During these last 10 minutes steam the bao buns for 8 minutes
- Once the mushroom are completed you are ready to assemble
- Split open the bao bun add some hoisin sauce to the delicious sticky mushroom meat, the carrot and spring onion, top with a few pieces of sliced red eye chilli and chrushed peanuts and munch until you are ready to boa out!
